Sakura blossoms have deep significance in Japanese culture. The start of Sakura season marks the start of Spring and symbolizes new beginnings. Sakura season reminds us that life is beautiful and fleeting, as the cherry blossom blooms only last about two weeks. During this time, Japanese people often enjoy festivities such as eating and drinking under the Sakura trees while enjoying the beautiful atmosphere.

Inspired by the celebration, our chefs have created a sensational Sakura Kaiseki utilizing the freshest ingredients. Indulge in a marvellous five-course menu that features a variety of fresh seafood, Aburi sushi, and a delightful dessert.

Start off the meal with a Sashimi Crudo Amuse, featuring Aburi style akami, BC wild sockeye salmon, and botan ebi.

For the first course, we have a Kaiseki Zensai featuring Sakura Sal Cured Hokkaido Scallops, Soy Braised Abalone, a fresh oyster with rhubarb mignonette, and Heirloom Tomatoes with Umeboshi (Japanese Pickled Plum).

The next course is a Red Wine Shoyu Glazed Duck Breast & Seared Foie Gras. This entrée is served with market baby vegetables, black garlic purée, puffed buckwheat and porcini powder.

The following course is an Aburi Sushi Selection featuring sous-vide lobster, tai, as well as our signature Aburi Salmon Oshi, Ebi Oshi, and Miku Roll.

Completing the meal is a Sakura Mousse for dessert. Delicate flavours of the matcha almond cake and sakura mousse are combined with cherry caviar and served with fresh mint ice cream for a delightful finish.
