From June 1 to July 3, discover the vibrant flavours of the early Summer season with our six-course Early Summer Kaiseki Menu, thoughtfully curated by Chef de Cuisine Michael Acero. This limited-time tasting experience highlights the transition into summer through a selection of premium ingredients, refined techniques, and elegant presentations inspired by the season.

The experience begins with a rich Wagyu Tartare amuse, followed by a sashimi course featuring Chef's selection of seasonal fish, showcasing the freshest offerings of the day. The

Hassun course celebrates the abundance of early summer with Ikura and Citrus Panna Cotta, Eggplant Tart, Hokkaido Scallops accented with sansho, and a Sakura Ebi Fritter. Guests will then enjoy Aburi Sawara served with peperonata and shio kombu, highlighting the balance of smoky and savoury flavours that define Aburi cuisine.

The sushi course features an exceptional selection of seasonal and signature creations, including Shima Aji with chive pesto and kogiku, Sawara with negi miso and Tokyo negi, Chutoro topped with foie gras, a Hotate Oshi Bite, and Wagyu Nigiri finished with wasabi pickle and crispy fried alfalfa.

For the entrée, premium A5 Japanese Wagyu is served with watercress, horseradish, sunchokes, and a rich miso glaze, creating a harmonious balance of richness and brightness.

The experience concludes with a Hojicha Strawberry Caramel Cookie Mille-Feuille, accompanied by ginger ice cream and strawberry sauce, offering a refreshing and elegant finish to the meal.
