From April 1 to 30, experience the beauty of cherry blossom season with our six-course Sakura Kaiseki Menu, a refined seasonal tasting curated by Chef de Cuisine Michael Acero. Complement the experience with our featured cocktail, Sakurita, offering a refreshing floral note inspired by the season.
The experience begins with an elegant Wagyu Tartare amuse, followed by a delicate sashimi course featuring Akami with negi shio, Atlantic salmon, creamy uni with aonori, Hotaru ika with saikyo yuzu miso, Kobujime Hirame with kara miso, and Botan Ebi. The Hassun course celebrates the spirit of spring with Uni Panna Cotta, Duck Croquette with truffle katsu sauce, Lobster sunomono with eggplant and shiso, and a Sakura Ebi tartlet.
Guests will then enjoy King Salmon finished with umeboshi cherry sauce and tomato, before moving into a beautifully composed sushi course featuring Ika Somen with uni and kinome in tsuyu dashi, oshizushi with yuzu kosho and lotus root, Chutoro with foie gras, Shima Aji with chive paste, and Sakura Dai with shiso powder and hajikami. The entrée highlights premium A5 Japanese Kobe Wagyu, served with mustard jus, sunchokes, and sakura miso glaze. The experience concludes on a sweet note with Sakura Bavarois, accompanied by port wine–infused dark cherry, pistachio cookie crumble, coconut sorbet, and sakura leaf chips.
